Thai Massaman Curry Recipe
Ingredients
- 5 tbsp “Regal Thai®” Massaman Curry Paste
- 300 ml “Regal Thai®” Coconut Milk
- 120 g Potatoes, peeled and cut into cubes, boiled
- 50 g Cooked Pearl Onion.
- 300 g Chicken thigh (with or without skin)
- 2 tbsp Roasted peanut, grounded
- 1 tbsp “Regal Thai®” fish sauce
- 2 tbsp Palm Sugar
Directions
- Boil the chicken thigh in coconut milk (save about 3 tbsp. for later use) until just done take out of stove and keep.
- In another pot heat the remaining coconut milk with the curry paste until cooked. Be careful not to burn it.
- Add the chicken pieces into the paste mixture along with coconut milk. Add peanuts and simmer until chicken is tender.
- Once boiled, season with fish sauce and palm sugar
- Add potatoes, cooked pearl onions simmer for 5 minutes and turn off the heat.
- Serve hot with ‘Regal Thai®’ Jasmine Rice
